This Blue Masa Flour is sourced from a cooperative of indigenous farmers located near the Popocatepetl Volcano in the Mexican state of Puebla. Blue corn is the primary crop in this region and the farmers use traditional techniques (milpa) which guarantees the preservation of their corn varieties. All-natural blue corn is gluten-free, vegan, and non-GMO. Blue Corn is high in antioxidants, has anti-inflammatory properties, and is higher in protein than its yellow counterparts. It also has less starch for a lower glycemic index, thus being a better choice for diabetics and people on a low-carb diet.
